The pressed caviar is salted right in the ovaries, after that it is taken out of the brine and left to get dry for a little while. It is important that the upper part of the eggs become dry, and the inner part remains raw. The next stage of the process is to remove all membranas and veins. Then the caviar is placed into a large container and pressed. And as a result the successful combination of raw and dried eggs is obtained and this gives a unique taste.
